As the holidays are upon us I thought a festive looking Christmas morning casserole recipe was in order. This has been called an oven omelet and also a crust less quiche but either way it has been a hit with our guests over the years and with the colorful peppers in the mix it is perfect for Christmas morning or brunch anytime during the holidays.
MORNING CASSEROLE
8 EGGS
1 CUP MILK
1/2 TSP SEASONED SALT
2 CUPS FROZEN SHREDDED HASH BROWN POTATOES
1 CUP FROZEN CHOPPED GREEN AND RED PEPPERS
1 CUP SHREDDED SHARP CHEDDAR CHEESE
1 TBSP DRIED MINCED CHIVES
In a large bowl beat the eggs, milk and seasoned salt. Stir in the remaining ingredients.
Pour into a greased 8-inch square baking dish.
Bake, uncovered, at 350 for 45 – 50 minutes until a knife inserted near the center comes our clean.
