This has been an odd winter here in Annapolis, Maryland with a recent snow fall of over 28 inches and today temperatures in the mid-50’s are predicted. February has just started so I am sure we will see more swings in the weather throughout the month. My thoughts turned to what to make for a dessert option that would encompass both extremes we have seen in the past few weeks.
Ice cream is always a winner for young and old alike. But, this time of year the ice cream needs a little added attraction to make it more winter-like. Adding cooked, warm bananas to a bowl of ice cream gives it a wintry touch. Below is an easy recipe for a quick and satisfying dessert.
If you want to make this for Valentine’s Day just add a few strawberries when serving.
MAPLE BAKED BANANAS
2 tbsp butter or margarine
3 tbsp maple syrup
4 bananas, cut in half crosswise, then lengthwise
In a shallow microwave dish melt the butter. Add the maple syrup, blending well.
Add the bananas, spooning the mixture over to coat.
Cover with wax paper or vented cling wrap
Cook on high for 1 minute
Turn the bananas over and cook on high for 1 1/2 minutes more
Place bananas over ice cream in individual bowls and cover with cinnamon to taste.
